Abstract
The kinetics of the pressure induced hydration of model lipid membranes is studied in terms of the Avrami-Kolmogorov model
and the fractal-like chemical reaction kinetics concept. As a general result, the stretched exponential relaxation function
of the process is obtained and applied to an experimental case of the dioleoylphosphatidylethanolamine (DOPE)-bilayer hydration,
understood as a cooperative process in which, both, the structural lipid changes and hydration are coupled in a complex way
with each other, and hypothesized in terms of the anomalous random walk. The trends of both theory and experiment are in agreement.
